Capalbio Cabernet Sauvignon

Classification: DOC (Denominazione di Origine Controllata - Quality Wines Produced in a Specific Region)

Color: red, sometimes with purple highlights

Region of production: Tuscany

Minimum alcohol content: 12%

Grapes used: Cabernet Sauvignon (85-100%), other non-aromatic red grapes from recommended and/or authorized vineyards in the province of Grosseto (0-15%)


FRUIT OF THE MAREMMA SUN

The Capalbio appellation, one of the most recently constituted classifications, represents the fruit of the profound bond that exists between the land in the province of Grosseto and the local winegrowers.

The decision to create this new appellation grew out of the desire to further exalt the wines of the Maremma area in Tuscany. This is an area whose wines have always been overshadowed by the more famous appellation wines of Tuscany.

Of all the wines authorized to boast the Capalbio appellation, one of the most interesting is the Cabernet Sauvignon. A wine with outstanding character, created to be a featured component of the Maremma cuisine, both for use in cooking and to be enjoyed at the table. People immediately love this wine for its intense ruby-red color, which tends to take on a garnet hue with aging. Its bouquet is equally intense, winey and full-bodied, as one would expect of an energetic grape like the cabernet sauvignon. It's the flavor, however, that makes this wine unforgettable, thanks to its harmony and just the right degree of tannic tang.

We recommend it accompanied by a rustic bruschetta or Tuscan-style crostino (both of which are types of toast), abundantly spread with rabbit liver and sprinkled with black pepper, in keeping with the culinary tradition of the Maremma. But this wine is also excellent with stewed wild boar or grilled meat- two dishes that are always featured at the local fairs and town festivals held in this part of Italy.

As is always the case with such distinctive, full-bodied red wines, you have to uncork them an hour before serving, remembering that it's always a good idea to leave them in a decanter for a short while, allowing them to be properly oxygenated. The beautiful sights of this picturesque southern tip of Tuscany are certainly worth visiting. Be sure to stop at Capalbio, Magliano, Manciano and Orbetello. These are towns that are quite different from one another in terms of both their unique histories as well as the diverse soil compositions of the arable land, with some of the vineyards reaching almost down to the sea and others clinging resolutely to rugged hillsides. It is this variability that lends all the Capalbio appellation wines the distinctive energy and character that only the Maremma sun can ensure.
