Spaghetti with garlic cream

The unmistakable flavour of garlic is a fundamental element of Italian cuisine. This recipe is a tribute to all garlic-lovers.
INGREDIENTS
Spaghetti Barilla
350
g
Extra virgin olive oil
4
tablespoons
Garlic
5
cloves
Chives
to taste
Parmigiano Reggiano cheese
to taste
Salt
to taste
Pepper
to taste

PREPARATION
1. Peel the garlic cloves and crush in a mortar, then mix with the oil. Add salt, pepper and the chopped chives.

2. Cook the Spaghetti Barilla in abundant salted water, drain when al dente and dress with the garlic sauce. Sprinkle some Parmigiano Reggiano cheese scales, then serve.

CHEF'S NOTE
To save time, blend the garlic and chives in a mixer while gradually pouring in the oil. For a more zesty touch, add some aged pecorino cheese scales before serving.
