PREPARATION |

In a bowl, beat the eggs with the sugar. Add the flour a little at a time, then the milk and Marsala, beating the mixture all the while. |

Cook the mixture over a slow heat, continuing to mix until it is thick. |

Pour into a pudding basin moistened with Marsala, leave to cool then place in the fridge for at least two hours. |

On serving, tip the pudding onto a serving dish. |
