Finally Sunday!


A day to dedicate to oneself and others, here's a menu for the most coveted day of the week: alive with flavour and international influences reworked according to Italian tradition. Savoury quiche and Fettucine garden style, chicken and rabbit "alla Cacciatora" with a classic southern Italian side dish. And for dessert a country style pie: all in all, lovers of simple but original cuisine will not be able to resist the allure of these traditional dishes.
Antipasto
> Savoury Quiche
For a sweeter quiche substitute "Milano" salami for the pepperoni and add 50g of ricotta to the beaten eggs.

First course
> Fettuccine with garden flavours
Ratatouille is a French dish made of mixed diced vegetables, in the pure Mediterranean tradition.

Second course
> Chicken and rabbit "alla Cacciatora"
Pellegrino Artusi used to prepare "risotto alla cacciatora". If you have a little meat left over, try it: toast the rice in oil and butter, add the leftover meat and finish cooking the risotto with stock. Serve with plenty of Parmigiano Reggiano.

Side dish
> "Ciammotta" (vegetable medley)
"Ciammotta" is a recipe that comes from the Basilicata region and is made up of vegetables sautéed separately in olive oil and mixed together, then accented with garlic. Some recipes call for the addition of an egg.

Dessert
> Country style pie
In order to obtain a flaky crust avoid overworking, and thereby overheating, the butter when mixing the ingredients. For the same reason the dough should be chilled in the refrigerator once mixed.
