A meal in glorious Technicolor


A triumph of colors, for a summer meal to be served perhaps on the veranda with lots of friends: from the herbs and sweet peppers to the zucchini and cherry tomatoes, the undisputed central ingredients are the fresh vegetables typical of spring.
Antipasto

This menu opens with a rustic pie in which the delicate flavor of beet greens is merged with the harmony of typically Italian cheeses, like ricotta and Parmigiano Reggiano.

First course
> Penne Rigate with zucchini and lemon
A simple and quick recipe characterised by its fresh flavours especially the lemon skin.

Second course
> Aromatic kebabs
Crunchy slices of sweet pepper add an original note to these meat kebabs; a tangy summery aroma is provided by the chopped herbs and garlic.

Side dish

Tomatoes au gratin: a popular dish throughout Italy. The version we are suggesting is typical of the South, enlivened by capers and anchovy.
