In Florence, where art lies in every corner, there had to be someone with a careful eye on the marvels of good cuisine.
From 1973 Annie Féolde and Giorgio Pinchiorri arranged their bet: creating also in Italy a restaurant that could blend together the right surroundings, a special atmosphere and refined cuisine.
Their deep roots in the territory and an open-mind for new tastes and flavours lead to the creation of dishes that amaze the eyes and palate. |

You certainly cannot say that the two patrons failed in their endeavour: it's been years since their restaurant reached the first positions in the main wine and food guides in Italy and abroad. The reason for such success comes from the experience with which, assisted by their children and by a great number of really valid chefs in the kitchen as well as an impeccable maitre in the dining room, they were able to blend the great Tuscan (and Italian) gastronomic tradition with innovation. The absolute freshness of the raw materials and a masterly execution completes the description which is already "stellar".
The cellar, probably Italy's most important one in terms of quality and number, boasts national and foreign labels that cannot be found elsewhere. The service is faultless, discreet and professional. Naturally an experience that involves such a level of delight for the senses requires an appropriate cash outlay. |

Here is some of the offer which varies thoroughly from season to season: prawns wrapped up in lard and fried; trofie with mantis shrimps, fresh tomatoes, basil and bottarga layers; mullets filled with basil and caviar and a potato pie in green olive sauce; ravioli made with Swiss chards and pigeon sauce, toasted pine kernels, melting vegetables and zucchini flowers; duck breast with roasted peaches and sweet bay leaves; lobster with rosemary and asparagus tips, pears with ginger sauce; apple pie with Calvados, Bavarian crème and a hot sauce with cinnamon honey; coffee doughnuts with banana crème and wild rice with rosemary. Excellent cheese served on a tea trolley and homemade bread complete the picture. |
