| Ristorante Doc is situated in a villa of retro charm belonging to Borgio Verezzi in the province of Savona, where you can enjoy the offer of chef Paolo Alberelli, in a small dining room with just a few elegantly prepared tables. With his wife Cinzia Mattioli, he has been running this restaurant since 1982; a few years ago their son Vinicio started working with them to continue the family's tradition. |

The accurate selection of prime materials, together with a great deal of creativity in interpreting the territory's gastronomic tradition, are the strong points of this restaurant.
Madam Cinzia, a professional sommelier, welcomes her guests and naturally suggests the wine, from a cellar that is really worthwhile discovering as it offers over one-hundred of the best Italian labels.
This year something new came up: the eno-club Caffè was inaugurated in the restaurant's garden, which will remain open every summer. Here you can taste wine specialities, spirits and liqueurs from Italian tradition accompanied by famous homemade sweets. |

The menu changes from day to day according to the fish available, as it is the basis of many dishes offered at the Doc. If fish is by all means the main protagonist, important parts are also played by extra-virgin olive oil, and Ligurian spices such as sweet marjoram, tarragon and basil.
Among the hors d'oeuvre we suggest carpaccio and a tartar sauce made with different types of fish, marinated with citrus fruits and accompanied with crispy salads; or a quiche of shellfish with pumpkin and nutmeg crème. Following, excellent trofie with shrimps and rosemary or Penne with a sauce of local mullets. For second course dishes, the choice is broad: in particular we suggest a gilthead in a black sesame crust. Deserts are also worth mentioning: an excellent chocolate flan on a light white mint crème and burned demerara brown sugar crème and Armagnac brandy. |
