In the heart of the medieval town of Tuscania, one of the most beautiful in the upper Lazio area lies this refined restaurant which also has a few rooms for those wishing to stop for the night. The bright rooms are furnished with the sobriety and taste of country furnishings; the windows afford a view of the ancient roofs of Tuscania. Specialities: Chef Giuseppe Odierna prepares robust and aromatic regional dishes with seasonal products from the area. The quail's breast saltimbocca with sage and cheek is worth trying, as are the spiced rabbit fillet with pea cream and lamb cutlets with herbs. The desserts include a memorable chocolate pie. Wine cellar: the wine list features all the DOC (Denominazione di Origine Controllata- Controlled Denomination of Origin) wines of Viterbo's Etruscan hills, such as Canaiolo, Grechetto and Violone.

The Canestro family runs this cosy rustic-style restaurant in Vitorchiano, at the foot of the Cimini mountains north of Viterbo. Chef Marco Migliani interprets the local cuisine whilst remaining close to tradition. The specialities include stuffed tortelloni pasta with a cream of deer and duck ham as well as pan-cooked roe deer with woodland aromas. The wine cellar boasts 800 labels and heavily features Italian wines.

In Tolfa, a village in the heart of the homonymous mountains south of Tarquinia, autumn is the best season for trying the game specialities of Chef Ferrero Fracassa. The meat dishes are delicious such as hunter-style wild boar, spit roasted suckling pig and chops with Fornara, a local sheep's milk cheese. The unmissable aniseed doughnuts to be savoured with a good raisin wine conclude the meal.

The restaurant is thus called (Spit roast at the arch) because it is located at Monte Romano near the arch of a fifteenth-century palazzo which marked the entrance to the Maremma, and each season was crossed by animals being moved on by their herds. These rustic origins are respected by the Chef who specialises in dishes using beef obtained from the ancient breed of Maremma cattle perfumed with myrtle, mastic and other aromas from the Mediterranean undergrowth.

Excellent local cuisine overseen by Chef Fulvio Pagliacci in this restaurant which is also a wine bar, opened in the ex-stables of the sixteenth-century Palazzo dei Mercanti in Viterbo. The real house speciality is "giubba e calzoni", a single dish made using shoulder of lamb, artichokes, calamint, tomatoes and stale bread. It was the food of the shepherds in the upper Lazio region as was the lentil soup of Onano and saddle of wild boar in a coriander sauce, also prepared according to tradition.
