Merit of husband and wife team Alfonso and Livia Iaccarino, who rework traditional Mediterranean recipes using only products from their organic farm. Speciality: Fusilli pasta with baby tuna, green chilli peppers and processed roe, wheel of swordfish with lavender, red potatoes stuffed with oysters.
