The Elodia Restaurant

Located on the lower slopes of the Gran Sasso, the Elodia Restaurant is in the little village of Camarda. just outside of the capital of the region of Abruzzo: Aquila. To get there just turn off the Roma-Teramo autostrada at the Assergi toll station (casello) and take state highway 17 bis, continuing for about 14 km. Originally opened as a cafe-trattoria back in 1974, the Elodia is currently one of the best known and most highly regarded restaurants in all of Abruzzo. The dishes they serve are both simple and, at the same time, sophisticated; they are based on the local traditions and produce which have been scrupulously selected from the copious array available in Abruzzo and then prepared with passion and imaginative flair


THE RESTAURANT
The kitchen is run by Elodia, assisted by her daughter, Vilma; her other two children, Antonello and Nadia, welcome customers in the dining rooms of this strictly non-smoking establishment. All three are expert sommeliers; Elodia's children came onboard as members of the staff following the remodeling of the eatery, which took place in 1992. When it comes to the fare, no menu from this part of the world would be complete without a selection of pre-selected meals featuring saffron from Navelli, in the province of Aquila. The offering ranges from lamb with saffron to a heavenly ricotta and chocolate cake, also flavored with those costly yellow pistils. They extensive wine list is also very interesting; in addition to the best local wines from Abruzzo, it offers a broad selection of Italian wines in general.
THE FARE
The little town of Navelli also provides the chick peas, along with a great many other local specialties, from the organic olive oil to a fine selection of cheese (first and foremost, pecorino and an exquisite ricotta, which is also made from ewe's milk), from wild mushrooms to little truffle mortadella sausages, which, like all the meat products served at the Elodia, come from the Paganico Cooperative Farm. Saffron is also used to flavor a crisp-crusted bread that is specially prepared fresh for each customer and it is featured in the preparation of an excellent Bucatini pasta served with a cream sauce with chic peas and pig's cheek; the latter ingredient is also featured in the recipe for another wonderful first course dish: Fusilli pasta with fresh mountain ricotta and crisp pig's cheek bacon, flavored with a healthy splash of Trebbiano d'Abruzzo wine.
