La Terrazza

Suspended between heaven and earth, in one of those enchanting rooftop scenarios typical of Rome, you'll find "La Terrazza" , the restaurant of one of the most exclusive hotels in the Italian capital, the Eden. The quaint, evocative setting will immediately beguile your eyes and the food will bewitch your palate thanks to the peerless mastery of a "royal" chef. We are referring to Enrico Derflingher, the restaurant's Executive Chef who, before coming to work at this prestigious Roman establishment, was employed as the personal chef of Princess Diana and Prince Charles of England, not to mention the fact that he was the first Italian to receive the prestigious "Chef of the Year" award. Enrico traveled around the world, opening seven restaurants, before coming to Rome. Now "La Terrazza" is his domain; this is where he prepares his famous delicacies for the fortunate guests of the hotel, exquisite dishes that have earned him numerous recognitions, such as the Michelin star and Golden Gate award.


THE RESTAURANT
The sophisticated elegance and atmosphere of yesteryear distinguish this rooftop loggia, a very smart place that is frequented by American movie stars, Italian actors and an international mix of politicians and VIPs, whose hearts are inevitably won by the "modern Mediterranean" flavors of the "La Terrazza" cuisine. This was Federico Fellini's favorite place to give interviews, basking in the golden sun and ambrosial fragrances of this ancient city, enchanted by the breathtaking view. This fine old establishment has played host to such luminaries as Enrico Mattei, Orson Welles, Omar Sharif, Maria Callas, Tom Cruise, John Malkovich and many other illustrious names from the worlds of American show business and Italian history. Under the delightful spell of the Eternal City, in this splendid roof garden, capable of seating up to 60 people, the luxury of the sumptuous decor meets the simple taste of a sophisticated cuisine that is rigorous in its selection of Mediterranean flavors, boldly exploring new culinary horizons.
THE FARE
More than a thousand different dishes are prepared by Chef Enrico and his able team of artists who are capable of giving rise to delectable specialties, always light and tasty, but sumptuous and baroque, proposing a culinary vision that is wholesome and light, composed of clean, fresh flavors that are masterfully blended so as to never lose their individual identity, in keeping with the dictates of good health and the latest trends in gourmet eating. This restaurant features no less than 34 different olive oils. In addition to the regular menu items, Chef Derflingher delights his admirers with special macrobiotic and Roman menus, each one consisting of four courses. But this doesn't include the cheeses, for which there's a special menu that boasts very rare specialties to be enjoyed with wine as a dessert, each cheese being combined with just the right wine. And speaking of Bacchus's divine nectar, the wine cellar features some 300 different labels in order to satisfy even the most demanding palates. Getting back to food, be sure to try the spaghetti with saffron, zucchini and mazzancolle (a kind of prawn), the warm carpaccio (raw beef) with mushrooms and rucola; the lamb loin roast baked in a sheath of sweet peppers and nettles, pumpkin flowers baked with ricotta and taleggio cheese; turbot with lemon and capers and sea bass baked in a shell of salt and black olives.
