Le Melograne

Surrounded by vineyards, Torgiano is an ancient hill-town just 8 kilometers from Perugia, in the heart of Umbria in the center of Italy. With its castle, the watchtower and the defensive walls, time seems to have stood still here. Long known for its excellent olive oil and wines, in recent decades the area has begun specializing in pedigreed wines. These efforts have been so successful that the Torgiano red wine was the first in Umbria to be granted DOC appellation status (DOC /Denominazione d'Origine Controllata) / Quality wines produced in a specific region). It was later awarded the prestigious Italian DOCG appellation. (DOCG /Controlled and Guaranteed Denomination of Origin).


THE RESTAURANT
A sophisticated five-star inn, the "Tre Vaselle", is located right on the walls of the town; it's a favorite destination of gourmets and anyone else who wants to treat himself to a relaxing break in the peaceful Umbrian countryside. This quaint hotel is located in a huge seventeenth-century house with thick walls, wooden beams, terracotta tile floors and huge stone fireplaces. It also hosts a restaurant called "Le Melograne". A very charming place featuring period furniture, hand-loomed textiles, trompe-l'oeil work and paintings and engravings portraying Bacchic scenes; combining to produce a very cozy and congenial atmosphere. The service is also outstanding, but the wine cellar is the establishment's real pride and joy. The hotel also features a special room for cooking classes which are periodically conducted by both the chef of the "Le Melograne" as well as outside cookery experts.
THE FARE
"Le Melograne" features very sophisticated cuisine thanks to the skill and creativity of the chef, Domenico d'Imperio, who prepares haute cuisine along with traditional Umbrian foods, an authentic expression of the Mediterranean diet. Renown for both its creativity as well as its traditionally-prepared dishes, the restaurant features a variety of dishes that deserve special attention. Special mention should also be given to the excellent olive oil and the caciotta pecorina cheese. The most outstanding of all the dishes is a real masterpiece of flavor, the bean puree with chicory that is served with Torgiano olive oil, followed by a dish of Linguine with marinated salmon and zucchini strips and flowers. The second courses include an authentic specialty, a filet of Chianino veal with slices of black Norcia truffle and Rubesco sauce, served with broccoli from Lake Trasimeno all'agro. Among the desserts, the vin santo (sweet wine) semifreddo with raisins marinated in grappa from Torre di Giano certainly deserves special mention.
