Refuge hopping

In recent years the Trentino and Alto Adige region has been enjoying increasing popularity owing not just to the appeal of winter sports, a perennial attraction, but also local cuisine.

Local food and wine are primary ingredients in what the region has to offer its visitors, and there is no shortage of "high altitude" chefs who marry innovation and tradition to create genuine local fare with a refined touch.


SAVOURING ALTA BADIA
La Siriola, renowned restaurant in San Cassiano, you can discover local dishes in a charming atmosphere nestled in one of the most enchanting areas of the Italian Alps. At the same time, simple mountain refuges and huts, such as "Capanna Alpina" or "Fanes", provide a unique opportunity to savour the products of mountain pasture grazing; here you can rediscover the genuine flavour of traditional butter with overtones of grass and wildflowers.

THE ART OF SMOKING PORK
Nothing too complicated, just a cutting board with a slice of "speck" (salt-cured, smoked pork), a sampling of mountain pasture cheeses, and a little smoked pork loin. In addition to the aromatic Traminer, the highly sought-after white wine of the region, great local reds make an outstanding accompaniment.

Lagrein Dunkel, for example, with its rich violet colour and echoes of blackberry and blueberry in the nose, or a Teroldego novello, whose aromas can win over connoisseurs who normally shun young wines. Even when it becomes dessert time there is lots to choose from. In the mountain refuges you are likely to find Kaisershmarrn, a thick omelette cut into large pieces with raisins, a variety of jams and a mountain of powdered sugar; usually served with a glass of "Goldenmuskateller", a golden-hued dessert wine produced from Muscat grapes.

Another local specialty are Marillenknodel; sweet dumplings with apricot and cinnamon, one of the most irresistible delicacies of the South-Tyrolean tradition. Last, but not least, we cannot speak of desserts and South Tyrol without experiencing the myriad of local variations on classic strudel.
