Fine eating is a fundamental component of local life. But don't expect fancy dishes, because Umbrian cuisine is quite simple, based on ingredients that have been flavored by a centuries-long tradition of excellent olive oils and choice meats. |

| In this context the pork-butcher's shop plays a pivotal role, offering gourmets from all over the world an almost unlimited selection of sausage products, both bulk and link-style, the fruit of an art handed down from generation to generation. Wild bore meat is also available, as this animal is still hunted in the local mountains. It is often served with black Norcia truffles, another proud mainstay of the local cuisine. Cultivated since time immemorial in this part of Italy, legumes deserve a chapter to themselves. A good example would be the wonderful lentils of Castelluccio, which in recent years have become famous well beyond the borders of Umbria. We often encounter them among the ingredients of flavorful meat stews featuring anything from rabbit to game, which are dishes they go with perfectly. Special mention should also be made of the roast suckling pig and the spelt soup, other great classics of the local cuisine, not to mention the excellent extra-virgin olive oil produced in the Umbrian olive groves, some of the best in Italy in every way. |

BREAD, A TIME-HONORED TRADITION |

| Bread is also an indispensable component of the Umbrian culinary tradition, and is available in all sorts of sizes and descriptions. We urge visitors to try the "pan nociato", a specialty made with pecorino cheese, walnuts and pine nuts, and the local "torta al testo con i ciccioli", a typical focaccia bread baked on a stone disk and stuffed with the little pieces of pork obtained when melting the fat to make lard, one of the tastiest and most intriguing delicacies found in this simple, wholesome corner of the world. The best way to find out about the local traditions is to take a tour of the food fairs that are held frequently throughout the year in the major towns of Umbria. In the Assisi area, alone, they hold about ten such events, from the lupin fair to the pancake fair, from a fair celebrating roast goose to one honoring vino novello. |
