| The 22 May will see the opening in Modena of the exhibition "Balsamico è", entirely dedicated to one of the most prized and well loved gastronomic products of the area. There are many novelties this year- the sixth edition- starting from the name of the exhibition which until last year was called "Balsamica". For three weekends, until 6 June, the Emilian city will be hosting stands, exhibitions and tastings of Traditional Balsamic Vinegar of Modena and other typical products from the area, including the renowned Parmigiano Reggiano cheese. Throughout the entire period of the kermes, it will also be possible to visit the vinegar houses. |

THE SECRETS OF BALSAMIC VINEGAR OF MODENA |

To be authentic it has to be packaged in 100 ml bottles, numbered and certified by the Consortium that governs them. This is just one of the many secrets of real Traditional Balsamic Vinegar of Modena, celebrated in its area of origin during "Balsamico è", opening on 22 May. The show involves exhibitions and tastings of the most famous gastronomic product of the area with stands set up in Piazza Mazzini on the three weekends until 6 June. But the real attraction in this kermes is the possibility to visit the old vinegar houses scattered around Modena. Here it is possible to observe in first person the production of the vinegar, whilst expert tasters of the Consortium will guide visitors on a discovery trip through the subtle differences of taste between one variety and another, revealing the secrets of balsamic vinegar. For example, not many know that a cherry wood cask is sufficient to render the vinegar sweeter. For the occasion, the Museum of Traditional Balsamic Vinegar of Modena, located in the vinegar house guild of Spilamberto, opens its doors to welcome visitors who, on Saturdays and Sundays, will be able to reach it with organised bicycle trips with tastings spread out along the way. The museum will exhibit traditional tools used for the production of the vinegar, and guided training for running a vinegar house. The cookery courses, lasting about three hours and held in the restaurants of the city and which will be followed by lunch or dinner, are useful for learning about Modena balsamic vinegar in cooking. Thus we learn that this is an extremely versatile dressing but which is difficult to dose out correctly: just a few drops suffice to enhance the flavour of any dish. The event in honour of the most exclusive typical product of Modena will also be presenting a varied programme of arte music and performance events including a wide ranging programme that not only involves Modena but also the other municipalities of the province such as Spilamberto, Sassuolo, Carpi, Nonantola and Vignola. In the end the exhibition will culminate with a big dinner in the piazza on Friday 4 June, during which traditional Emilian dishes will be served, enhanced with a few drops of balsamic vinegar. |
